Elderberry Syrup - 1/2 cup dried elderberries, 3 cups water, and 1 cup honey.
1.Low-Medium Simmer 30-45 minutes - reduce by half
2.Mash berries then strain
3.Add Honey.. 1 part decoction to 1 part honey
4.Let cool, bottle and store in frig 2-3 months
Dosage: 1-2 tsp, 2x a day, 1/2 for children. When sick, increase by 2-3 times this intake.

Fresh Violet Syrup
1/2 lb fresh violet leaves
1 quart water
Raw local honey
Pour cold water over leaves and soak, simmer the next day for 15 minutes and strain. Add 1 cup honey to every 1/2 cup violet water.
Heat to melt the honey into the water but DO NOT BOIL.
Refrigerate unused portion. 1-2 tsp. dose for children over 1 yr. and 1-2 tbl. for adults.
Great for pancakes/waffles. Also used as yummy cough syrup, and for sore throats!

Chicory (Cichorium intybus), AKA coffeeweed or cornflower, is flowering in our NC mountains. Once used as a coffee substitue in the Depression and WWII era, products like Luzianne Coffee & Chicory are still available today. Other great coffee substitutes to harvest this fall or to buy and roast are dandelion root, dried garbanzo beans, beet root, barley and rice.
Wineberries are wild and happy with all this rain! Time for Basil Wineberry Lemonade … Take 2 cups basil, 2 cups water, 1/2 cup wineberries (or other berry), lemon zest from 2 lemons and 1 cup organic sugar or honey. Bring to boil and shut off the heat, let steep for 1 hr. Strain and use as sugar base for lemonade or your syrup for your favorite mixed drink. Garnish with wineberries and fresh basil sprig.
